Ingredients

  • 250 g self-raising flour
  • 120 g suet (vegetarian or beef)
  • 2 tbsp caster sugar
  • 150 ml whole milk
  • 1 tsp lemon zest
  • 150 g strawberry jam (or your favorite flavor)
  • 15 g unsalted butter
  • 1 tbsp granulated sugar (for sprinkling)
  • 1 sheet baking parchment

Directions

Step 1

Preheat the oven to 200°C (180°C fan) or 400°F. Line a baking tray with parchment paper and set aside.

Step 2

In a large mixing bowl, combine the self-raising flour, suet, caster sugar, and lemon zest.

Step 3

Gradually add the milk to the dry ingredients, stirring with a wooden spoon until a soft but not sticky dough forms. If the dough feels too dry, add a little more milk, a teaspoon at a time.

Lightly flour your work surface and rolling pin. Roll the dough out into a rectangle approximately 30cm x 20cm (12in x 8in).
