Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 tablespoon Granulated sugar
  • 1 cup Unsalted butter (cold, cubed)
  • 0.5 cup Shortening (cold)
  • 6 tablespoons Ice water
  • 1 teaspoon White vinegar

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, salt, and granulated sugar until evenly combined.

Step 2

Add the cold, cubed butter and cold shortening to the bowl. Using a pastry cutter or your fingers, cut the fats into the flour mixture until it resembles coarse crumbs with pea-sized bits of butter remaining.

Step 3

In a small bowl, mix the ice water and white vinegar together.

Step 4

Gradually drizzle the ice water mixture into the dough a tablespoon at a time, gently mixing after each addition. Continue until the dough just comes together and holds its shape when pressed. You may not need all the water.

Step 5

Divide the dough into two equal portions and shape each into a disc. Wrap tightly in plastic wrap and refrigerate for at least 1 hour or until firm.

Step 6

When ready to use, roll out each dough disc on a lightly floured surface to fit your pie pan, approximately 12 inches in diameter for a standard 9-inch pie.

Step 7

Carefully transfer the rolled-out dough to your pie pan and gently press it into place. Trim any excess dough around the edges, leaving a slight overhang for crimping if desired.

Step 8

Use as directed in your favorite pie recipe. For a pre-baked crust, prick the bottom with a fork, line with parchment paper, and fill with pie weights. Bake at 375°F for 15 minutes, then remove the weights and bake for an additional 5-10 minutes until lightly golden.
