Ingredients

  • 0.75 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1 large Egg
  • 0.5 cup Molasses
  • 2.25 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Salt
  • 0.5 cup Extra granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and molasses to the butter-sugar mixture. Beat until fully incorporated and smooth.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, cloves, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.

Step 6

Using a tablespoon or cookie scoop, portion out the dough and roll each piece into a ball. Roll the balls in the extra granulated sugar to coat them completely.

Step 7

Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set and the tops are puffed and slightly cracked. Do not overbake, as the cookies will firm up as they cool.

Step 9

Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes. Transfer the cookies to a wire rack to cool completely.

Step 10

Store the cooled cookies in an airtight container at room temperature for up to 5 days. Enjoy with a glass of milk or a warm cup of tea!
