Ingredients

  • 6 ounces Cherry-flavored gelatin (Jell-O)
  • 2 cups Hot water
  • 2 cups Coca-Cola
  • 8 ounces Crushed pineapple (with juice)
  • 1 cup Dark sweet cherries (pitted, canned or jarred, drained)
  • 0.5 cup Pecans (chopped)
  • 4 ounces Cream cheese (softened)

Directions

Step 1

In a large mixing bowl, dissolve the cherry-flavored gelatin in 2 cups of hot water. Stir until fully dissolved.

Step 2

Let the mixture cool slightly before stirring in 2 cups of Coca-Cola. Be careful when adding the soda, as it may fizz.

Step 3

Add the crushed pineapple with its juice, the drained dark sweet cherries, and the chopped pecans to the gelatin mixture. Stir thoroughly to combine.

Step 4

Pour the mixture into a 9x13-inch dish or a serving mold of your choice.

Step 5

Refrigerate for 2–3 hours, or until the gelatin is partially set but not completely firm.

Step 6

Once the gelatin has partially set, drop small dollops of softened cream cheese evenly over the surface. Gently swirl it into the gelatin using a knife or spatula for a marbled effect.

Step 7

Return the dish to the refrigerator and chill for an additional 2–3 hours, or until fully set.

Step 8

Before serving, you can garnish with additional pecans or cherries, if desired. Slice and serve chilled.
