Ingredients

  • 2 large Sweet potatoes
  • 6 tablespoons Unsalted butter
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 2 large Eggs
  • 0.5 cup Whole milk
  • 0.25 cup Evaporated milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 9-inch Unbaked pie crust

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Rinse and scrub the sweet potatoes thoroughly. Place them in a large pot, cover with water, and boil for 40-50 minutes, or until they are fork-tender.

Step 3

Once the sweet potatoes are cool enough to handle, peel off the skins and transfer the flesh to a large mixing bowl.

Step 4

Add the unsalted butter to the warm sweet potatoes and mash until smooth.

Step 5

Stir in the granulated sugar, brown sugar, cinnamon, nutmeg, and salt until well combined.

Step 6

Beat the eggs in a separate bowl and mix them into the sweet potato mixture.

Step 7

Gradually stir in the whole milk, evaporated milk, and vanilla extract. Mix until the filling is smooth and creamy.

Step 8

Roll out the unbaked pie crust into a 9-inch pie dish. Trim and crimp the edges as desired.

Step 9

Pour the sweet potato filling into the prepared pie crust, smoothing out the top with a spatula.

Step 10

Bake the pie in the preheated oven for 50 minutes, or until the filling is set and slightly jiggly in the center.

Step 11

Remove the pie from the oven and let it cool completely on a wire rack, about 2 hours.

Step 12

Slice and serve at room temperature or chilled. Optionally, add whipped cream as a garnish for an extra touch of sweetness.
