  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned white beans (such as cannellini), drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes (optional)
  • 6 cups fresh spinach, roughly chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup Parmesan cheese, grated (for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the sausage to the pot and cook, breaking it up into small pieces, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set it aside.
