Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter
  • 0.75 cups milk
  • 3 eggs
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 2 tablespoons lemon zest
  • 0.25 cups fresh lemon juice
  • 1 cups powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 tablespoon unsalted butter (for greasing pan)

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with 1 tablespoon of unsalted butter and lightly dust with flour. Set aside.

Step 2

In a medium mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together to distribute the ingredients evenly.

Step 3

In a large mixing bowl, cream the 0.5 cups of unsalted butter and 1.5 cups of granulated sugar together using an electric mixer set to medium speed until light and fluffy, about 3-4 minutes.

Step 4

Add the eggs to the butter-sugar mixture one at a time, beating well after each addition.

Step 5

Mix in the lemon zest and 0.25 cups of fresh lemon juice until fully combined.

Step 6

Reduce the mixer speed to low and alternately add the dry flour mixture and the milk to the wet ingredients in three portions, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 10

To prepare the glaze, whisk together 1 cup of powdered sugar and 2 tablespoons of fresh lemon juice in a small bowl until smooth.

Step 11

Once the cake has cooled completely, drizzle the glaze evenly over the top, allowing it to run down the sides.

Step 12

Let the glaze set for 10 minutes before slicing and serving.
