  • 4 ears Fresh corn
  • 1.5 cups Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 0.25 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of water to a boil. Add the corn and cook for 4-5 minutes, or until tender. Remove the corn from the pot and let it cool slightly.

Step 2

Using a sharp knife, carefully slice the kernels off the cobs and transfer them to a large mixing bowl.

Halve the cherry tomatoes, dice the cucumber, and chop the red bell pepper into small pieces. Add them to the bowl with the corn.

Step 4

Finely chop the red onion and fresh cilantro. Add these to the salad bowl.

Step 5

In a small mixing bowl, whisk together lime juice, olive oil, salt, and black pepper to create the dressing.

Step 6

Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.

Step 7

Taste and adjust seasoning if needed, adding more salt or lime juice to suit your preference.

Step 8

Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld before serving.
