Ingredients

  • 1 cup Green or brown lentils
  • 2 cups Water
  • 0.5 teaspoon Salt
  • 1 cup Walnuts
  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 Hard-boiled eggs, peeled and halved
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Smoked paprika (optional)

Directions

Step 1

Rinse the lentils under cold water and place them in a medium-sized saucepan with 2 cups of water and 0.5 teaspoon of salt.

Step 2

Bring the lentils to a boil, reduce the heat to low, cover, and simmer for 20-25 minutes, or until tender but not mushy. Drain any excess water and set aside to cool slightly.

Step 3

While the lentils cook, toast the walnuts in a dry skillet over medium heat, stirring frequently, until they are fragrant and lightly browned, about 5-7 minutes. Remove from heat and set aside.
