  • 0.5 cup shredded cheddar cheese
  • 4 tablespoons butter (for mashed potatoes)
  • 0.5 cup milk (for mashed potatoes)
  • 4 large russet potatoes (for mashed potatoes)
  • 1 teaspoon salt (for mashed potatoes)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the russet potatoes, cut them into large chunks, and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
