Ingredients

  • 6 cups (diced) ripe tomatoes
  • 2 cups (diced) onions
  • 1.5 cups white vinegar
  • 1.25 cups white sugar
  • 1 tablespoon salt
  • 1 teaspoon ground mustard
  • 1 teaspoon ground turmeric
  • 0.5 teaspoons ground allspice
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Wash and dice the tomatoes and onions into small, uniform pieces.

Step 2

In a large heavy-bottomed pot, combine the diced tomatoes, onions, white vinegar, sugar, salt, ground mustard, turmeric, and allspice.

Step 3

Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally to ensure the sugar dissolves fully.

Step 4

Reduce the heat to low and simmer the mixture uncovered for about 1 hour, or until the mixture thickens slightly and the flavors meld together. Stir occasionally to prevent sticking.

Step 5

In a small bowl, mix the cornstarch with water to create a smooth slurry.

Step 6

Gradually add the cornstarch slurry to the simmering relish, stirring constantly to avoid lumps. Cook for another 10–15 minutes, or until the relish thickens to your desired consistency.

Step 7

Remove the pot from heat and allow the relish to cool slightly.

Step 8

While still warm, transfer the tomato relish into sterilized jars, leaving about 1/2 inch of headspace. Secure the lids tightly.

Step 9

Allow the jars to cool completely at room temperature before refrigerating. For longer storage, process the jars in a water bath canner following proper sterilization and sealing guidelines.

Step 10

Serve the tomato relish with your favorite dishes or store in the refrigerator for up to 2 weeks.
