Ingredients

  • 1 head (medium) green cabbage
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 cloves, minced garlic
  • 0.25 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 3 tablespoons tomato paste
  • 1.5 cups water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon caraway seeds

Directions

Step 1

Remove the outer leaves of the cabbage and discard. Cut the cabbage into quarters, remove the core, and slice into thin strips.

Step 2

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for 1 minute, being careful not to let it burn.

Step 5

Add the cabbage to the skillet and toss to coat with the oil, onions, and garlic. Cook for 5-7 minutes, stirring occasionally, until the cabbage begins to soften.

Step 6

In a small bowl, whisk together the apple cider vinegar, brown sugar, tomato paste, and water. Pour the mixture over the cabbage.

Step 7

Add the salt, black pepper, and caraway seeds to the skillet and stir well to combine.

Step 8

Cover the skillet with a lid, lower the heat to medium-low, and let the cabbage simmer for 20 minutes, stirring occasionally, until tender and infused with the sweet-and-sour flavors.

Step 9

Taste and adjust seasoning, if needed. Serve warm as a side dish or over mashed potatoes for a comforting meal.
