Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 0.5 cup Dry white wine (or chicken stock)
  • 2 tablespoons Fresh lemon juice
  • 0.25 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 ounces Linguine (or pasta of choice)
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Boil a large pot of salted water. Cook the linguine according to the package instructions, until al dente. Drain and set aside, reserving 1/4 cup of the pasta cooking water.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant but not browned.

Step 4

Add the shrimp to the skillet in a single layer. Season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes per side, until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

To the same skillet, add the remaining 2 tablespoons of butter. Once melted, pour in the white wine (or chicken stock) and lemon juice. Stir to combine and bring to a simmer. Let the sauce reduce slightly, about 2-3 minutes.

Step 6

Return the cooked shrimp to the skillet, tossing to coat them in the sauce.

Step 7

Add the drained pasta to the skillet, tossing gently to combine with the shrimp and sauce. If the mixture seems dry, add the reserved pasta cooking water, one tablespoon at a time, until the desired consistency is achieved.

Step 8

Remove the skillet from heat and garnish with fresh parsley and, if desired, Parmesan cheese.
