Ingredients

  • 24 crackers Ritz crackers
  • 1 cup Walnuts
  • 3 large Egg whites
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped cream
  • 0.25 cup Chopped nuts or grated chocolate (optional for garnish)

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease or line a 9-inch pie pan with parchment paper.

Step 2

Crush the Ritz crackers into fine crumbs either using a food processor or placing them in a sealed plastic bag and crushing with a rolling pin.

Step 3

Chop the walnuts into small pieces and set them aside.

Step 4

In a clean mixing bowl, use an electric mixer to beat the egg whites until they form soft peaks.

Step 5

Gradually add the sugar, one tablespoon at a time, to the egg whites while continuing to beat until the mixture becomes glossy and stiff peaks form.

Step 6

Fold in the crushed Ritz crackers, chopped walnuts, baking powder, and vanilla extract using a spatula. Mix gently to avoid deflating the egg whites.

Step 7

Pour the mixture into the prepared pie pan and spread it evenly using the back of a spoon or an offset spatula.

Step 8

Bake in the preheated oven for 25–30 minutes, or until the pie is set and lightly golden on top. A toothpick inserted in the center should come out clean.

Step 9

Allow the pie to cool completely before serving. Top it with whipped cream and, if desired, garnish with additional chopped nuts or grated chocolate.

Step 10

Slice and serve. Store any leftovers covered in the refrigerator for up to 2 days.
