Ingredients

  • 1 pound Ricotta cheese
  • 1.5 cups All-purpose flour
  • 2 large Eggs
  • 0.5 cup Parmesan cheese
  • 1 teaspoon Salt
  • 0.25 teaspoon Nutmeg
  • 0.5 cup Semolina or extra all-purpose flour (for dusting)

Directions

Step 1

Place the ricotta cheese in a fine mesh strainer or cheesecloth and let it drain for 30 minutes to remove any excess moisture. This step is important to avoid soggy gnocchi.

Step 2

In a large mixing bowl, combine the drained ricotta, all-purpose flour, eggs, Parmesan cheese, salt, and nutmeg. Mix gently with a wooden spoon or your hands until a soft dough forms. Be careful not to overmix.

Step 3

Lightly flour a clean surface with semolina or extra all-purpose flour. Divide the dough into 4 equal portions.

Step 4

Roll each portion into a long, thin rope about 3/4 inch in diameter. Use a bench scraper or knife to cut the rope into 1-inch pieces to form gnocchi.

Step 5

Optional: To create the classic gnocchi ridges, roll each piece over the back of a fork or a gnocchi board, pressing gently with your thumb.

Step 6

Bring a large pot of salted water to a boil. Working in batches, carefully drop the gnocchi into the boiling water. They are done when they float to the surface, which takes about 2-3 minutes.

Step 7

Use a slotted spoon to transfer the cooked gnocchi to a serving dish. Toss gently with your favorite sauce, such as marinara, brown butter and sage, or creamy Alfredo.

Step 8

Serve immediately, sprinkled with extra Parmesan cheese and fresh herbs if desired.
