Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, sliced
  • 2 pieces garlic cloves, minced
  • 3 cups sauerkraut, drained
  • 1 cup chicken broth
  • 0.5 teaspoon caraway seeds
  • 2 medium apples, peeled and thinly sliced
  • 1 tablespoon brown sugar

Directions

Step 1

Season both sides of the pork chops with salt and black pepper.

Step 2

Dredge the pork chops lightly in the all-purpose flour, shaking off any excess.

Step 3

Heat a large skillet over medium-high heat and add the vegetable oil. Once the oil is shimmering, sear the pork chops for 3-4 minutes per side until they are golden brown. Remove the pork chops from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the sliced onion. Sauté for 3-4 minutes until soft and translucent, then add the minced garlic and cook for an additional 1 minute.

Step 5

Stir in the sauerkraut, chicken broth, and caraway seeds. Mix well to combine.

Step 6

Nestle the seared pork chops back into the skillet, spooning some of the sauerkraut mixture over the top.

Step 7

Scatter the sliced apples over the sauerkraut and pork chops, then sprinkle the brown sugar evenly over the skillet.

Step 8

Cover the skillet with a lid and reduce the heat to low. Simmer for 35-40 minutes, or until the pork chops are tender and fully cooked with an internal temperature of 145°F (63°C).

Step 9

Taste and adjust seasoning if needed before serving.

Step 10

Serve warm, directly from the skillet, with your favorite side dish such as mashed potatoes or crusty bread.
