  • 300 grams Mixed dried fruits (e.g., raisins, currants, sultanas)
  • 150 grams Brown sugar
  • 250 ml Black tea (strongly brewed)
  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 1 large Egg
  • 50 grams Butter (melted)

Directions

Step 1

In a large mixing bowl, combine the mixed dried fruits, brown sugar, and brewed black tea. Stir well, cover, and let it soak for at least 1 hour or overnight for deeper flavor.

Step 2

Preheat your oven to 160°C (320°F) and line a 9x5-inch loaf pan with parchment paper or lightly grease it.

Step 3

In a separate bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and ground nutmeg.

Step 4

Add the soaked fruit mixture to the dry ingredients and mix gently to combine.

Step 5

Whisk the egg in a small bowl, then stir it into the mixture along with the melted butter. Mix until everything is evenly combined but do not overmix.

Step 6

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 7

Bake the fruit loaf in the preheated oven for 60 minutes or until a skewer inserted into the center comes out clean.

Step 8

Remove the loaf from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Slice and serve your delicious Nana's Fruit Loaf on its own or with a light spread of butter. Store in an airtight container for up to 5 days or freeze for longer storage.
