Ingredients

  • 500 grams sponge cake (pre-made or homemade)
  • 1 packet fruit-flavored jelly (such as raspberry or strawberry)
  • 500 ml boiling water
  • 200 ml cold water
  • 100 ml sherry (optional, for soaking the sponge)
  • 3 tablespoons custard powder
  • 500 ml milk
  • 2 tablespoons granulated sugar
  • 300 grams mixed fresh fruit (e.g., strawberries, raspberries, bananas, kiwis)
  • 250 ml whipping cream
  • 1 tablespoon powdered sugar
  • 2 tablespoons toasted almonds or sprinkles (optional, for garnish)

Directions

Step 1

Prepare the jelly by dissolving the packet contents in 500 ml of boiling water. Stir until fully dissolved, then add 200 ml of cold water. Let it cool to room temperature but do not allow it to set.

Step 2

Cut the sponge cake into slices or cubes and arrange them in the bottom of a large trifle dish. If using sherry, drizzle it evenly over the sponge cake to soak.

Step 3

Pour the cooled jelly over the sponge layer, ensuring it seeps into the cake. Place the dish in the refrigerator and allow the jelly to partially set (about 30 minutes).

Step 4

While the jelly is setting, prepare the custard. In a saucepan, mix custard powder, granulated sugar, and a small amount of milk to make a smooth paste. Gradually add the remaining milk while stirring.

Step 5

Cook the custard over medium heat, stirring constantly, until it thickens. Remove from heat and let it cool slightly, stirring occasionally to prevent a skin from forming.

Step 6

Layer the mixed fresh fruit over the partially set jelly in the trifle dish. Spread the cooled custard evenly over the fruit layer.

Step 7

Whip the cream with the powdered sugar until soft peaks form. Spoon or pipe the whipped cream over the custard layer.

Step 8

Optional: Sprinkle toasted almonds or colorful sprinkles over the whipped cream for garnish.

Step 9

Chill the trifle in the refrigerator for at least 2 hours before serving to let the layers set and the flavors meld.
