  • 3 pounds Chuck roast
  • 2 teaspoons Kosher salt
  • 1 teaspoons Black pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, sliced
  • 3 cloves Garlic, minced
  • 4 medium Carrots, peeled and cut into large chunks
  • 3 medium Russet potatoes, peeled and cubed
  • 2 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chuck roast generously with salt and pepper. Sprinkle flour on all sides of the roast, lightly coating it.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Transfer the roast to the crock pot.

Step 3

In the same skillet, add the sliced onion and garlic. Sauté for 2-3 minutes, scraping up any browned bits from the bottom of the pan. Transfer the onions and garlic to the crock pot.
