Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 1 cup Unsalted butter, softened
  • 2 large Eggs
  • 1 cup Sour cream
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 teaspoons Ground cinnamon
  • 0.5 cup Pecans or walnuts, chopped (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the sour cream and vanilla extract until smooth.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

In a small bowl, combine the brown sugar and ground cinnamon. This will be your cinnamon-sugar filling and topping.

Step 7

Pour half of the cake batter into the prepared pan and spread it evenly. Sprinkle half of the cinnamon-sugar mixture over the batter, along with half of the chopped nuts if using.

Step 8

Spread the remaining cake batter over the cinnamon layer, taking care to spread it evenly. Sprinkle the remaining cinnamon-sugar mixture and nuts over the top.

Step 9

Bake the coffee cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for about 15 minutes. Serve warm or at room temperature. Enjoy with a cup of coffee or tea!
