Ingredients

  • 2 pounds Ground pork
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Smoked paprika
  • 2 tablespoons Ground ancho chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground coriander
  • 0.25 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground cloves
  • 1 teaspoon Kosher salt
  • 0.5 teaspoons Freshly ground black pepper
  • 0.5 teaspoons Crushed red pepper flakes (optional for heat)

Directions

Step 1

In a large bowl, add the ground pork and apple cider vinegar. Mix gently with your hands or a spatula until combined.

Step 2

In a separate small bowl, combine the smoked paprika, ground ancho chili powder, ground cumin, dried oregano, garlic powder, onion powder, ground coriander, ground cinnamon, ground cloves, kosher salt, black pepper, and crushed red pepper flakes (if using). Mix the spices together thoroughly.

Step 3

Sprinkle the spice mixture evenly over the ground pork and mix until the spices are fully incorporated. Use your hands for the best results, but avoid over-mixing to prevent the pork from becoming tough.

Step 4

Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or up to overnight to allow the flavors to meld. For a stronger flavor, marinate longer.

Step 5

To cook the chorizo, heat a large skillet over medium heat. Add the chorizo mixture and cook, breaking it into smaller pieces with a wooden spoon or spatula, until browned and fully cooked, about 10-15 minutes.

Step 6

Taste and adjust seasoning, if necessary. Serve hot in tacos, atop rice, or as part of your favorite dishes.

Step 7

Store any leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
