Ingredients

  • 3 medium ripe bananas
  • 0.5 cup unsalted butter
  • 0.75 cup granulated sugar
  • 0.25 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 cup whole milk
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, use a fork or potato masher to mash the ripe bananas until smooth. Set aside.

Step 3

In a separate mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.

Step 4

Add the eggs to the butter mixture, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

In a third bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.

Step 6

Alternately add the dry ingredients and milk to the wet ingredients, starting and ending with the dry ingredients. Stir until just combined. Do not overmix.

Step 7

Gently fold in the mashed bananas and, if using, the chopped walnuts.

Step 8

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
