Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef (85% lean)
  • 28 ounces canned diced tomatoes
  • 2 tablespoons canned tomato paste
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional, for extra heat)
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (for serving)
  • 0.25 cup sour cream (for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion and sauté for 4-5 minutes until softened.

Step 3

Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 4

Add the ground beef to the pot and cook until browned, breaking it up into small pieces with a wooden spoon. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.

Step 6

Add the canned diced tomatoes, tomato paste, kidney beans, black beans, and beef broth to the pot. Stir well to combine.

Step 7

Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and let the chili cook for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasonings as needed. If the chili is too thick, add a splash of water or more beef broth to reach your desired consistency.

Step 9

Once the chili is ready, ladle it into bowls and top with shredded cheddar cheese, a dollop of sour cream, and chopped fresh cilantro, if desired.

Step 10

Serve warm with your favorite side such as cornbread or tortilla chips.
