Ingredients

  • 2 cups Coarse semolina (cream of wheat)
  • 1 cup Granulated sugar
  • 1 cup Unsalted butter, melted
  • 1 cup Plain yogurt
  • 2 teaspoons Baking powder
  • 2 tablespoons Tahini (for greasing pan)
  • 20 pieces Peeled almonds (for decoration)
  • 1.5 cups Water (for syrup)
  • 1.5 cups Granulated sugar (for syrup)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Rose water or orange blossom water

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine the semolina, sugar, baking powder, melted butter, and yogurt. Mix well until a thick batter forms.

Grease a 9x13-inch baking pan with tahini, making sure to spread it evenly to prevent sticking.

Pour the batter into the prepared pan and smooth the surface with the back of a spoon or spatula.

Using a knife, score the batter into diamond or square shapes (but do not cut all the way to the bottom). Place one almond in the center of each piece as decoration.

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the edges are slightly crisp.

While the cake is baking, prepare the sugar syrup. In a saucepan, combine water, sugar, and lemon juice. When the cake is done, remove it from the oven and immediately pour the warm sugar syrup uniformly over the hot cake. Allow the syrup to soak into the cake completely.
