Ingredients

  • 250 grams Unsalted butter
  • 300 grams Dark chocolate (chopped)
  • 200 grams Granulated sugar
  • 100 grams Brown sugar
  • 4 large Eggs (room temperature)
  • 200 grams All-purpose flour
  • 30 grams Cocoa powder
  • 0.5 teaspoons Salt
  • 1 teaspoons Baking powder
  • 200 ml Heavy cream
  • 20 grams Powdered sugar (for dusting)

Directions

Step 1

Preheat the oven to 175°C (350°F) and grease a 9x13 inch (23x33 cm) sheet pan. Line the bottom with parchment paper for easy removal.

Step 2

In a heatproof bowl set over a pot of simmering water, melt the butter and chopped dark chocolate together. Stir occasionally until smooth, then remove from heat and let cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar and brown sugar. Add the eggs one at a time, whisking well after each addition until the mixture is pale and fluffy (about 2-3 minutes).

Step 4

Slowly pour the melted chocolate mixture into the egg and sugar mixture, stirring constantly to combine.

Step 5

Sift the flour, cocoa powder, salt, and baking powder into the wet ingredients, folding gently with a spatula until no dry streaks remain.

Step 6

Pour in the heavy cream and gently mix until the batter is smooth and glossy.

Step 7

Transfer the batter into the prepared sheet pan, spreading it evenly with a spatula. Tap the pan lightly on the counter to release any air bubbles.

Step 8

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake; the cake should remain slightly fudgy.

Step 9

Remove the cake from the oven and let it cool completely in the pan.

Step 10

Once cooled, sift powdered sugar over the top for a final touch. Slice into squares or rectangles and serve. Optionally, refrigerate for an extra-chilled, dense texture reminiscent of classic Nama chocolate.
