Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil and set aside.
In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Remove the spinach mixture from the heat and let it cool slightly.
