Ingredients

  • 4 pieces Boneless chicken breasts
  • 2 cups Fresh spinach
  • 4 ounces Cream cheese
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil and set aside.

Step 2

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Remove the spinach mixture from the heat and let it cool slightly.

Step 4

In a mixing bowl, combine the sautéed spinach, cream cheese, shredded mozzarella, grated Parmesan, oregano, and a pinch of salt and pepper. Mix well to form the stuffing.

Using a sharp knife, make a horizontal slit along the side of each chicken breast to form a pocket. Be careful not to cut all the way through.

Remove the stuffed chicken from the oven and let it rest for 5 minutes before serving. Remove the toothpicks before plating.
