Ingredients

  • 1 pound Ground beef
  • 4 medium Red potatoes
  • 1 medium Yellow onion
  • 1 14.5-ounce can Diced tomatoes with green chilies
  • 1 packet Taco seasoning
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 2 tablespoons Cilantro
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Optional toppings (jalapeños, guacamole, salsa)

Directions

Step 1

Peel and roughly chop the onion into small pieces. Dice the red potatoes into bite-sized cubes, leaving the skins on for added texture.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking up the meat with a spatula. Drain any excess grease.

Step 3

Add the chopped onion to the skillet with the cooked beef and sauté for 2-3 minutes until the onion is slightly softened. Stir in the taco seasoning packet and mix well to coat the beef and onions evenly.
