Ingredients

  • 1 cup cherry tomatoes (halved or quartered)
  • 0.5 cup red onion (finely diced)
  • 0.5 cup cilantro (chopped)
  • 2 cups romaine lettuce (chopped)
  • 1 medium avocado (diced)
  • 1 cup tortilla chips (broken into bite-sized pieces)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring 2 cups of water (or vegetable broth) to a boil in a medium saucepan.
