Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 1 packet taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies (e.g., Rotel)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 5 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup sour cream (optional, for serving)
  • 0.25 cup sliced green onions (optional, for serving)
  • 2 tablespoons fresh cilantro, chopped (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula, about 5-7 minutes.

Step 3

Add the diced onion and minced garlic to the skillet. Cook until the onion is softened, about 3 minutes.

Step 4

Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and frozen corn. Cook for another 2-3 minutes until heated through. Remove from heat.

Step 5

Spread 3 cups of tortilla chips on the bottom of a 9x13-inch casserole dish.

Step 6

Layer half of the beef mixture over the tortilla chips, then sprinkle 1 cup of shredded cheddar cheese on top.

Step 7

Add another layer of 2 cups tortilla chips, followed by the remaining beef mixture and the remaining cheddar cheese.

Step 8

Sprinkle the shredded Monterey Jack cheese evenly over the top layer.

Step 9

Cover the dish with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Let the casserole cool for 5 minutes before serving. Garnish with sour cream, sliced green onions, and cilantro if desired.
