Ingredients

  • 12 oz Elbow macaroni
  • 1 lb Ground beef
  • 1 tbsp Olive oil
  • 1 medium Onion, diced
  • 1 medium Green bell pepper, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Crushed red pepper flakes
  • 15 oz Tomato sauce
  • 14.5 oz Diced tomatoes (canned, with juice)
  • 15 oz Kidney beans (canned, drained and rinsed)
  • 2 cups Cheddar cheese, shredded
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through. Remove the beef with a slotted spoon and set aside, leaving the fat in the pan.

Step 3

To the same skillet, add the diced onion and green bell pepper. Sauté for 3-4 minutes, or until the vegetables are softened. Add the minced garlic and cook for another 1 minute, stirring frequently to avoid burning.
