Ingredients

  • 250 grams all-purpose flour
  • 125 grams unsalted butter
  • 75 grams granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • 150 grams jam (any flavor)
  • 2 tablespoons powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour and baking powder until evenly combined.

Step 3

Add the cold, cubed unsalted butter to the flour mixture, and rub it in using your fingertips until the mixture resembles coarse breadcrumbs.

Step 4

Stir in the granulated sugar, then make a well in the center of the bowl.

Step 5

In a small bowl, combine the egg yolk, vanilla extract, and milk. Whisk until smooth.

Step 6

Pour the wet ingredients into the well of the dry ingredients and gently mix until a soft dough forms. Be careful not to overwork the dough.

Step 7

On a lightly floured surface, roll out the dough to about 1 cm (0.5 inches) thick.

Step 8

Using a round cookie cutter (about 6 cm or 2.5 inches in diameter), cut out biscuit shapes and transfer them to the prepared baking sheet, leaving about 2 cm (0.75 inches) of space between each.

Step 9

Using your thumb or the back of a teaspoon, make a small indentation in the center of each biscuit.

Step 10

Fill each indentation with about 1 teaspoon of your chosen jam.

Step 11

Bake the biscuits in the preheated oven for 12-15 minutes, or until they are lightly golden around the edges.

Step 12

Remove the biscuits from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 13

If desired, dust the cooled biscuits with powdered sugar before serving.
