Ingredients

  • 1 pound ground beef (or lamb for traditional Shepherd's Pie)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, peeled and diced
  • 1 celery stalk, diced
  • 3 garlic cloves, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 cup beef broth
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.5 cup milk (whole or 2%)
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

Step 3

While the potatoes cook, heat the olive oil in a large skillet over medium heat. Add the onion, carrot, and celery. Cook for 5-7 minutes until softened.

Step 4

Add the garlic and cook for another 1 minute until fragrant.

Step 5

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat if necessary.

Step 6

Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, salt, and black pepper. Cook for 5 minutes, allowing the liquid to slightly reduce and thicken. If you prefer a thicker filling, sprinkle in the flour and stir well.

Step 7

Add the frozen peas and cook for 2 minutes. Remove from heat and set aside.

Step 8

Drain the cooked potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with a pinch of salt and pepper to taste.

Step 9

Spread the beef mixture evenly into the bottom of a 9-inch baking dish.

Step 10

Spread the mashed potatoes over the beef layer, smoothing them out. If desired, sprinkle cheddar cheese over the top.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the mashed potato topping is lightly golden and the edges are bubbling.

Step 12

Remove from the oven and let it rest for 5 minutes before serving. Enjoy your comforting Shepherd's Pie!
