Ingredients

  • 16 large button mushrooms
  • 2 tablespoons olive oil
  • 0.5 cup, finely chopped yellow onion
  • 3 cloves, minced garlic
  • 0.5 cup breadcrumbs
  • 0.5 cup, grated Parmesan cheese
  • 4 ounces, softened cream cheese
  • 2 tablespoons, chopped parsley
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon butter
  • 1 spray for pan prep cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a baking sheet with cooking spray and set aside.

Step 2

Clean the mushrooms with a damp paper towel and carefully remove the stems. Set the caps aside and finely chop the stems.

Step 3

Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems, onion, and garlic, and sauté for 5-6 minutes until softened and fragrant.

Step 4

Reduce the heat to low and stir in breadcrumbs, Parmesan cheese, softened cream cheese, parsley, salt, and black pepper. Mix until evenly combined and creamy.

Step 5

Spoon the filling into each mushroom cap, pressing gently to fill them completely. Place the stuffed mushroom caps onto the prepared baking sheet.

Step 6

Melt the butter and drizzle it over the stuffed mushrooms for added flavor and a golden finish.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is golden on top.

Step 8

Remove from the oven and allow to cool for 5 minutes before serving. Garnish with additional parsley if desired.
