Ingredients

  • 1 lb lean ground beef or lamb
  • 2 lbs russet potatoes
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 6 tbsp butter
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • 1 cup beef or chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika (optional for garnish)
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Peel and chop the potatoes into small chunks and place them in a large pot of salted water. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes.

Step 2

While the potatoes are cooking, preheat your oven to 400°F (200°C).

Step 3

In a large skillet over medium heat, add the ground beef or lamb and cook until browned. Drain any excess fat and set the meat aside.

Step 4

In the same skillet, melt 2 tablespoons of butter and sauté the chopped onion, garlic, and diced carrots until softened, about 5-7 minutes.

Step 5

Stir the cooked meat back into the skillet, along with the flour. Mix to coat the mixture evenly.

Step 6

Add the tomato paste, Worcestershire sauce, beef or chicken broth, salt, and black pepper. Stir well and bring to a simmer. Let the mixture cook for 5 minutes until it thickens slightly.

Step 7

Stir in the frozen peas, remove the skillet from heat, and transfer the mixture to a 9x13-inch baking dish.

Step 8

Drain the cooked potatoes and mash them with 4 tablespoons of butter, the milk, and an additional pinch of salt to taste. Mash until smooth and creamy.

Step 9

Spread the mashed potatoes evenly over the meat and vegetable mixture in the baking dish. Use a fork to create decorative ridges or patterns on top.

Step 10

Optional: Sprinkle shredded cheddar cheese over the mashed potatoes for an extra golden and gooey topping.

Step 11

Bake in the preheated oven for 25 minutes, or until the top is golden and slightly crispy. Optional: Sprinkle with a dash of paprika for garnish.

Step 12

Let the Shepherd's Pie rest for a few minutes before serving. Serve warm and enjoy!
