Ingredients

  • 6 medium-sized fresh red beets
  • 2 medium-sized carrots
  • 1 medium-sized parsnip
  • 2 stalks celery stalks
  • 1 large onion
  • 3 cloves garlic cloves
  • 2 leaves bay leaves
  • 8 peppercorns whole black peppercorns
  • 4 berries allspice berries
  • 8 cups water
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons fresh dill (optional, for garnish)
  • 4 tablespoons sour cream (optional, for serving)

Directions

Step 1

Thoroughly wash and peel the beets, carrots, and parsnip. Cut the beets into quarters and the carrots and parsnip into large chunks.

Step 2

Place the beets, carrots, parsnip, celery stalks, and onion (peeled and halved) into a large stockpot.

Step 3

Add the garlic cloves, bay leaves, black peppercorns, and allspice berries to the pot.

Step 4

Pour 8 cups of water into the pot and bring to a boil over medium-high heat.

Step 5

Reduce the heat to low and let the soup simmer, uncovered, for approximately 60 to 75 minutes, or until the vegetables are tender and the broth is richly colored.

Step 6

Remove the pot from the heat. Strain the soup through a fine-mesh sieve into a clean pot or bowl to separate the broth from the vegetables and spices. Discard the solids.

Step 7

Stir in the lemon juice, sugar, and salt. Taste and adjust seasoning as needed. The soup should be slightly tangy yet balanced with a hint of sweetness.

Step 8

If serving immediately, reheat the strained broth gently over low heat (do not boil, as it can dull the vibrant color).

Step 9

Serve hot, garnished with fresh dill if desired. Optionally, add a dollop of sour cream to each bowl for a creamy touch.

Step 10

Enjoy this comforting and traditional Polish red beet soup, perfect for any occasion!
