Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 3 cloves cloves of garlic, minced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 1 medium jalapeño pepper, seeded and minced
  • 28 ounces diced tomatoes with juices (canned)
  • 15 ounces tomato sauce
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water or beef broth
  • None toppings such as shredded cheese, sour cream, chopped cilantro, diced red onions (optional)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium heat. Add the olive oil.

Step 2

Once the oil is hot, add the ground beef. Use a wooden spoon to break it up into crumbles as it cooks. Cook until browned, about 6-8 minutes, then remove with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until translucent. Stir frequently to prevent burning.

Step 4

Add the minced garlic, red bell pepper, green bell pepper, and minced jalapeño to the pot. Sauté for 5 minutes until the vegetables are softened.

Step 5

Stir in the chili powder, cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook the spices for 1-2 minutes to enhance their flavor.

Step 6

Return the browned beef to the pot along with the diced tomatoes (with their juices), tomato sauce, kidney beans, black beans, and water or beef broth. Stir everything together.

Step 7

Bring the chili to a gentle boil over medium-high heat, then reduce the heat to low. Cover and let it simmer for 1 hour, stirring occasionally to prevent sticking.

Step 8

After an hour, uncover the pot and let the chili simmer for an additional 20-30 minutes to thicken. Adjust seasoning with additional salt and pepper if needed.

Step 9

Serve hot in bowls with your favorite toppings, such as shredded cheese, sour cream, chopped cilantro, or diced red onions.
