Ingredients

  • 6 thick pork sausages
  • 2 tablespoons olive oil
  • 1 large brown onion
  • 2 garlic cloves
  • 2 tablespoons plain flour
  • 1.5 tablespoons curry powder
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 medium carrots
  • 1 cup frozen peas
  • 4 medium potatoes
  • 0.5 cup milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large pot, bring water to boil and cook the sausages for about 7–8 minutes until firm. Drain and set aside to cool slightly, then slice the sausages into 1-inch pieces.

Step 2

Peel and dice the brown onion and finely mince the garlic. Peel and slice the carrots into thin rounds.

Step 3

In a large skillet or deep saucepan, heat the olive oil over medium heat. Add the onion and cook for 3–4 minutes until softened. Add the garlic and cook for an additional minute until fragrant.

Step 4

Sprinkle the flour and curry powder over the onions and garlic, stirring continuously to create a roux. Cook for another minute to eliminate the raw flour taste.

Step 5

Gradually whisk in the beef stock, ensuring there are no lumps. Stir in the tomato paste and Worcestershire sauce. Bring the mixture to a gentle simmer and allow it to thicken slightly.

Step 6

Add the sliced sausages and carrots to the curry sauce. Reduce the heat to low, cover, and cook for 15 minutes, stirring occasionally to ensure the flavors meld.

Step 7

Add the frozen peas and cook for an additional 5 minutes. Taste and adjust seasoning with salt and black pepper, if necessary.

Step 8

While the curry simmers, peel and chop the potatoes into quarters. Place them in a pot of salted water and boil until tender, about 15–20 minutes.

Step 9

Drain the potatoes and mash them with milk, butter, salt, and black pepper to create creamy mashed potatoes.

Step 10

Serve the curried sausages over a generous scoop of mashed potatoes. Garnish with fresh parsley if desired and enjoy immediately.
