Ingredients

  • 4 pieces salmon fillets
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • 0.5 cups grated parmesan cheese
  • 1 cup frozen peas
  • 2 cups cooked pasta shells
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the salmon fillets with a pinch of salt and pepper, and place them on a baking tray lined with parchment paper. Bake in the oven for 10-12 minutes, or until just cooked through. Remove and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux.

Step 4

Gradually add the milk, a little at a time, whisking constantly to avoid lumps. Continue to cook and stir until the sauce thickens and becomes smooth.

Step 5

Stir in the grated cheddar cheese, parmesan cheese, dijon mustard, lemon juice, salt, and black pepper. Mix until the cheese has melted and the sauce is creamy.

Step 6

Add the frozen peas and cooked pasta shells to the cheese sauce, stirring to combine. Flake the cooked salmon fillets into large chunks and gently fold them into the mixture.

Step 7

Transfer the salmon and pasta mixture to a large baking dish. Spread it out evenly.

Step 8

In a small bowl, combine the breadcrumbs and olive oil. Sprinkle the breadcrumb mixture evenly over the top of the salmon mornay.

Step 9

Bake in the oven for 15-20 minutes, or until the topping is golden brown and crispy.

Step 10

Remove from the oven and let it cool slightly before serving. Enjoy your Mum's Salmon Mornay with a fresh side salad or steamed vegetables!
