Ingredients

  • 120 grams Plain flour
  • 2 large Eggs
  • 200 milliliters Milk
  • 0.5 teaspoons Salt
  • 2 tablespoons Vegetable oil or beef dripping

Directions

Step 1

Preheat your oven to 220°C (200°C fan) or 425°F.

Place a little vegetable oil or beef dripping into each compartment of a 12-hole muffin tin. The oil should just cover the base of each hole. Place the tin in the oven to heat up while you prepare the batter.

In a large mixing bowl, sift the plain flour and add the salt. Make a well in the center.

Crack the eggs into the well, then gradually whisk in the milk using a balloon whisk. Keep whisking until the mixture is smooth and has no lumps. The batter should have the consistency of single cream.
