  • 1 pound chicken thighs, diced
  • 6 cups chicken stock
  • 1 cup cooked basmati rice
  • 1 medium peeled, diced apple
  • 1 cup coconut milk
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the butter and olive oil in a large pot over medium heat.

Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until vegetables are softened.
