Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 1 small Red onion
  • 0.5 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Remove the outer leaves of the cabbage if necessary. Cut the cabbage in half and remove the core. Finely shred the cabbage using a sharp knife or a mandoline slicer and transfer it to a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or the grating attachment on a food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Peel and finely slice the red onion into thin strips, then add to the bowl with the cabbage and carrots.

Step 4

In a separate small mixing bowl, whisk together the mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the cabbage mixture and toss everything together until the vegetables are evenly coated.

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. (Optional: Garnish with chopped fresh parsley before serving.)

Step 7

Serve chilled as a side dish with your favorite main course. Enjoy!
