Ingredients

  • 1 spray Cooking spray
  • 1 large Onion, chopped
  • 3 medium Carrots, sliced
  • 3 stalks Celery stalks, sliced
  • 3 cloves Garlic, minced
  • 1 medium Zucchini, diced
  • 2 cups Cabbage, shredded
  • 1 cup Green beans, chopped
  • 1 14.5-ounce can Diced tomatoes, no salt added, canned
  • 6 cups Vegetable broth, low sodium
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Baby spinach, chopped

Directions

Step 1

Lightly coat the bottom of a large soup pot with cooking spray and heat over medium heat.

Step 2

Add the chopped onion, sliced carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are slightly softened.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the diced zucchini, shredded cabbage, and chopped green beans. Stir to combine the vegetables evenly.

Step 5

Pour in the canned diced tomatoes (along with their juices), vegetable broth, and tomato paste. Stir well to incorporate the tomato paste into the liquid.

Step 6

Sprinkle in the Italian seasoning, salt, and black pepper. Stir to mix the seasonings into the soup.

Step 7

Bring the soup to a gentle boil, then reduce the heat to low. Cover the pot and let the soup simmer for 20 minutes, stirring occasionally.

Step 8

After 20 minutes, stir in the chopped baby spinach and let the soup cook for an additional 2-3 minutes until the spinach is wilted.

Step 9

Taste and adjust seasoning as needed. Optionally, serve with a wedge of lemon or a sprinkle of fresh herbs for added flavor.
