Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 0.25 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 cup all-purpose flour
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 3 cups powdered sugar
  • 0.33 cup unsweetened cocoa powder (for frosting)
  • 0.5 cup unsalted butter (for frosting)
  • 0.33 cup whole milk
  • 1 teaspoon vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and set it aside.

Step 2

In a large saucepan over low heat, melt 1 cup of unsalted butter. Once melted, stir in 2 cups of granulated sugar and 0.25 cup of unsweetened cocoa powder until smooth. Remove from heat and let it cool slightly.

Step 3

Whisk in 4 large eggs, one at a time, into the butter mixture until fully combined.

Step 4

Add 1 cup of all-purpose flour, 0.25 teaspoon of salt, and 1 teaspoon of vanilla extract to the saucepan. Stir until the batter is smooth and well combined.

Step 5

Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 6

As soon as the cake comes out of the oven, evenly sprinkle 2 cups of mini marshmallows over the top of the hot cake. Let them melt slightly and stick to the surface.

Step 7

While the marshmallows are softening, make the frosting: In a medium saucepan, melt 0.5 cup of unsalted butter over low heat. Stir in 0.33 cup of unsweetened cocoa powder until smooth.

Step 8

Gradually add 0.33 cup of whole milk, whisking constantly. Remove from heat and stir in 3 cups of powdered sugar and 1 teaspoon of vanilla extract until the frosting is smooth and glossy.

Step 9

Pour the warm frosting over the marshmallow-topped cake, spreading it gently with a spatula to cover everything evenly.

Step 10

Let the cake cool completely at room temperature to allow the frosting to set before slicing and serving.
