  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 4 medium Golden potatoes

  • 2 teaspoons Paprika
  • 1.5 teaspoons Dried oregano
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 piece Lemon (juiced)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 cup Chicken broth
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the potatoes thoroughly and cut them into 1-inch chunks. Set aside.

Step 3

In a small bowl, combine paprika, dried oregano, ground cumin, salt, and black pepper.

Step 4

Pat the chicken thighs dry with paper towels. Rub 1 tablespoon of olive oil over the chicken and massage half of the spice mixture onto the thighs. Make sure to coat both sides evenly.

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes until the skin is golden and crispy. Flip the chicken and sear the other side for 2-3 minutes. Remove the chicken from the skillet and set aside.
