Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Pasta (penne or elbow macaroni)
  • 2 cups Frozen mixed vegetables (carrots, peas, corn, green beans)
  • 14.5 ounces Canned diced tomatoes
  • 8 ounces Tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Cheddar cheese, shredded
  • 1 tablespoon Olive oil
  • 8 cups Water

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish lightly with olive oil or nonstick spray.

Step 2

In a large pot, bring 8 cups of water to a boil. Add the pasta and cook according to the package instructions for al dente. Drain and set aside.

Step 3

Meanwhile, in a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, and sauté for 3-4 minutes until fragrant and translucent.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess grease.

Step 5

Stir in the canned diced tomatoes (with their juices), tomato sauce, Worcestershire sauce, Italian seasoning, salt, and black pepper. Simmer for 5 minutes on low heat.

Step 6

Add the frozen mixed vegetables to the meat mixture and stir to combine. Cook for an additional 5 minutes, then remove the skillet from the heat.

Step 7

In a large mixing bowl, combine the cooked pasta with the meat and vegetable mixture. Mix until evenly incorporated.

Step 8

Pour the mixture into the prepared casserole dish, spreading it out evenly.

Step 9

Sprinkle the shredded cheddar cheese generously on top of the casserole.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the cheese is fully melted and bubbly.

Step 11

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy your warm, comforting meal!
