Ingredients

  • 300 grams Green beans
  • 2 medium Carrots
  • 1 small Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Trim the ends of the green beans and cut into bite-sized pieces. Peel and slice the carrots into thin rounds or julienne strips, based on your preference.

Step 2

Bring a medium pot of water to a boil. Add a pinch of salt and blanch the green beans and carrots for 2-3 minutes until tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain well and set aside.

Step 3

Peel and finely dice the red onion. Finely chop the fresh parsley.

Step 4

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper to make the dressing.

Step 5

In a large mixing bowl, combine the blanched green beans, carrots, diced red onion, and chopped parsley. Pour the dressing over the vegetables and toss gently to coat everything evenly.

Step 6

Taste and adjust seasoning if needed. You can add extra salt, pepper, or a splash of vinegar for more tanginess.

Step 7

Let the salad sit for 10-15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
