Ingredients

  • 2 pounds Russet potatoes
  • 6 whole Garlic cloves
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.25 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Place the unpeeled garlic cloves on a small sheet of aluminum foil. Drizzle with 1 tablespoon of olive oil, wrap tightly, and roast in the oven for 20 minutes or until the garlic is soft and golden.

Step 2

While the garlic is roasting, peel and cut the potatoes into evenly sized chunks (about 2 inches). This ensures they cook evenly.

Step 3

Rinse the potato chunks under cold water to remove excess starch. Place them in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 4

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15–20 minutes, or until they are fork-tender.

Step 5

Once the garlic is roasted, remove it from the oven and let it cool slightly. Peel the skins off each clove and set the roasted garlic aside.

Step 6

Drain the potatoes in a colander and return them to the hot pot. This will help evaporate excess moisture and keep the mashed potatoes fluffy.

Step 7

In a small saucepan over low heat, combine the butter, heavy cream, and milk. Stir occasionally until the butter is melted and the mixture is warm. Do not let it boil.

Step 8

Mash the potatoes using a potato masher or a ricer for ultra-smooth texture. Add the roasted garlic, butter-cream mixture, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the potatoes. Stir until well combined and creamy. Adjust seasoning to taste.

Step 9

Transfer the garlic mashed potatoes to a serving bowl. Optionally, garnish with fresh parsley for a pop of color and added freshness.

Step 10

Serve the mashed potatoes warm and enjoy!
