Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced

  • 1 pound ground beef (or ground turkey)
  • 2 cans canned diced tomatoes (14 ounces each)
  • 2 cans canned kidney beans, drained and rinsed (15 ounces each)
  • 1 can canned black beans, drained and rinsed (15 ounces each)
  • 3 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 0 as needed shredded cheddar cheese (for garnish)
  • 0 as needed sour cream (for garnish)
  • 0 as needed sliced green onions (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef (or turkey). Cook until browned, breaking it into small crumbles with a wooden spoon, about 7-8 minutes.

Step 5

Drain any excess fat from the pot, if necessary.

Step 6

Add the diced tomatoes, kidney beans, black beans, tomato paste, and broth to the pot. Stir well to combine.

Step 7

Sprinkle in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, black pepper, and sugar. Stir everything together thoroughly.

Step 8

Bring the chili to a gentle boil, then reduce the heat to low and let it simmer uncovered for 30 minutes. Stir occasionally to prevent sticking.

Step 9

Taste the chili and adjust seasoning if needed (add more salt, pepper, or spices).

Step 10

Once cooked, ladle the chili into bowls and garnish with shredded cheddar cheese, a dollop of sour cream, and sliced green onions as desired.

Step 11

Serve hot and enjoy your delicious, comforting bowl of chili with a side of cornbread or crackers!
