Ingredients

  • 1 head (medium) Green cabbage
  • 2 large Carrots
  • 0.5 head (small) Red cabbage
  • 1 cup Mayonnaise
  • 3 tablespoons Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Celery seeds

Directions

Step 1

Remove the outer leaves of the green and red cabbages. Rinse the cabbages and pat them dry.

Step 2

Using a sharp knife or a mandoline slicer, shred the green cabbage into thin strips. Repeat with the red cabbage. Place both in a large mixing bowl.

Step 3

Peel the carrots and grate them using a box grater or a food processor. Add the grated carrots to the bowl with the shredded cabbages.

Step 4

In a medium bowl, whisk together the mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, salt, black pepper, and celery seeds until smooth and well combined.

Step 5

Pour the dressing over the cabbage and carrot mixture. Using tongs or clean hands, toss the mixture thoroughly until the vegetables are evenly coated with the dressing.

Step 6

Taste the coleslaw and adjust the salt, sugar, or vinegar to your preference, if needed.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together. This step is optional but recommended for best taste.

Step 8

Before serving, give the coleslaw a final toss. Serve cold as a side dish or topping for sandwiches and burgers.
