Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cups Whole milk
  • 2 cups Apples, peeled, cored, and diced (about 2 medium apples)
  • 0.25 cups Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan and set it aside.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set this dry mixture aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

With the mixer on low, alternate adding the dry ingredients and the milk to the wet mixture, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Using a spatula, gently fold in the diced apples until they are evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared baking pan and smooth out the top with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar, if desired. Slice and serve!
